Recipe: Airy spelt dinner rolls

I made around Christmas time last year to go with pulled pork, and I was surprised with how well they turned out. These would be great for small-ish hamburgers as well (or you could just make 8 of them instead of 12 to accommodate larger burgers.

Airy spelt dinner rolls

Yield: 12 rolls

Adapted from Whole Lifestyle Nutrition.

1 c warm water
1/4 c olive oil
2 tsp yeast
1 Tbsp honey
1 tsp salt
1 large egg
2 c whole spelt flour
1.5 c white spelt flour, plus more for dusting

Grease a 9×13-inch baking dish. Combine water, olive oil, yeast, and honey in a large bowl and let rest about 15 minutes; it should get bubbly. Mix in salt, egg, and flours. Turn onto clean, floured work surface and knead 5-10 minutes. Form into 12 equal-sized balls, arrange in greased baking dish, and let rise in a warm place for 10-30 minutes.

Preheat oven to 400 F. Bake for 12-15 minutes, until tops of rolls are golden brown. Let cool 5 minutes before separating and serving.
